Main Ingredients

  • 500 grams Chicken Breast Skinless and boneless for best flavor.
  • 2 medium Carrots Peeled and diced.
  • 2 stalks Celery Finely chopped.
  • 1 medium Onion Chopped.
  • 3 cloves Garlic Minced.
  • 6 cups Chicken Broth Low-sodium preferred.
  • 1/4 cup Lemon Juice Freshly squeezed.
  • 1 lemon Lemon Zest Zest of one lemon.
  • 1/4 cup Fresh Parsley Chopped, for garnish.
  • Salt and Pepper To taste.

Instructions
 

  • Prepare all ingredients: chop onions, carrots, celery, and mince garlic.
  • In a large pot, heat 2 tablespoons of olive oil over medium heat. Add chopped onions and sauté for 3-4 minutes until translucent.
  • Add minced garlic and sauté for another 1-2 minutes until fragrant.
  • Add diced carrots and chopped celery. Cook for about 5 minutes, stirring frequently.
  • Add chicken breast to the pot and stir to mix.
  • Pour in chicken broth and bring to a gentle boil.
  • Reduce heat to low and let simmer for 20 minutes.
  • Remove chicken breast, let cool, then shred into bite-sized pieces.
  • Add lemon juice and lemon zest to the pot, then return shredded chicken.
  • Season with salt and pepper to taste and simmer for an additional 5 minutes.
  • Stir in chopped parsley just before serving.
  • Serve hot in bowls and enjoy!

Notes

This soup can be stored in the refrigerator for up to three days or frozen for up to three months.
