Instructions
Prepare all ingredients: chop onions, carrots, celery, and mince garlic.
In a large pot, heat 2 tablespoons of olive oil over medium heat. Add chopped onions and sauté for 3-4 minutes until translucent.
Add minced garlic and sauté for another 1-2 minutes until fragrant.
Add diced carrots and chopped celery. Cook for about 5 minutes, stirring frequently.
Add chicken breast to the pot and stir to mix.
Pour in chicken broth and bring to a gentle boil.
Reduce heat to low and let simmer for 20 minutes.
Remove chicken breast, let cool, then shred into bite-sized pieces.
Add lemon juice and lemon zest to the pot, then return shredded chicken.
Season with salt and pepper to taste and simmer for an additional 5 minutes.
Stir in chopped parsley just before serving.
Serve hot in bowls and enjoy!

This soup can be stored in the refrigerator for up to three days or frozen for up to three months.
