Ingredients
  

Tortilla Chips

  • 12 oz tortilla chips Choose your favorite brand or make homemade chips for added freshness.

Cheese

  • 2 cups shredded cheese A blend of cheddar and Monterey Jack works beautifully.

Beans

  • 1 cup black beans Canned, rinsed and drained.

Corn

  • 1 cup corn kernels Fresh or frozen.

Bell Peppers

  • 1 medium red bell pepper Diced.
  • 1 medium green bell pepper Diced.

Onion

  • 1 medium red onion Chopped finely.

Jalapeño

  • 1 medium jalapeño pepper Sliced.

Avocado

  • 1 avocado Diced or sliced.

Tomatoes

  • 1 cup diced tomatoes Fresh or cherry tomatoes, chopped.

Cilantro

  • 1/4 cup fresh cilantro Chopped for garnish.

Lime

  • 1 lime Cut into wedges.

Sour Cream

  • sour cream or Greek yogurt Optional, for drizzling on top or serving as a dip.

Seasoning

  • salt and pepper To taste.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Prepare a large baking sheet by lining it with parchment paper or aluminum foil.
  • Spread the tortilla chips evenly across the baking sheet.
  • Sprinkle half of the shredded cheese over the tortilla chips.
  • Layer on the black beans, corn, diced bell peppers, red onion, and jalapeño slices.
  • Top the nachos with the remaining shredded cheese.
  • Place the baking sheet in the preheated oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
  • Once the nachos are out of the oven, let them cool for a minute.
  • While the nachos cool, prepare the avocado and tomatoes.
  • Once cooled, top the nachos with diced avocado, fresh tomatoes, and chopped cilantro. Squeeze lime juice over the top.
  • Serve immediately with sour cream or Greek yogurt on the side.
