Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a medium-sized bowl, combine the rolled oats, all-purpose flour, baking soda, and salt. Stir until well mixed.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract to the butter and sugar mixture. Mix until fully combined.
  • Gradually add the dry mixture to the wet ingredients, mixing on low speed until just combined.
  • If using, fold in chocolate chips or nuts.
  • Drop rounded balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden and the centers look slightly underbaked.
  • Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
