Instructions
Preheat your oven to 350°F (175°C).
In a medium-sized bowl, combine the rolled oats, all-purpose flour, baking soda, and salt. Stir until well mixed.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the egg and vanilla extract to the butter and sugar mixture. Mix until fully combined.
Gradually add the dry mixture to the wet ingredients, mixing on low speed until just combined.
If using, fold in chocolate chips or nuts.
Drop rounded balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden and the centers look slightly underbaked.
Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
