Instructions
1. Brown the sausage in a skillet over medium heat. Remove casing if using links and crumble the sausage. Cook until browned, about 5-7 minutes.
2. Transfer the cooked sausage to the slow cooker. In the same skillet, add chopped onion and garlic. Sauté for 2-3 minutes until translucent.
3. Add sautéed onions and garlic to the slow cooker along with sliced carrots, diced bell pepper, and diced potatoes.
4. Pour in the can of diced tomatoes and rinsed cannellini beans.
5. Pour the chicken broth over the mixture in the slow cooker.
6. Sprinkle Italian seasoning, smoked paprika, salt, and pepper over the top. Stir gently to combine.
7. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
8. Check potatoes and carrots for tenderness before serving.
9. Garnish with freshly chopped parsley before serving.
10. Serve hot, optionally with crusty bread or a green salad.
