  • 1 pound Sausage Your choice of chicken, turkey, or beef sausage.
  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.
  • 2 medium Carrots Sliced into rounds.
  • 1 medium Bell Pepper Diced (any color).
  • 2 medium Potatoes Diced into bite-sized pieces.
  • 1 can Diced Tomatoes 14.5 ounces, undrained.
  • 1 can Cannellini Beans 15 ounces, drained and rinsed.
  • 1 cup Low-Sodium Chicken Broth
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Smoked Paprika
  • Salt To taste.
  • Pepper To taste.
  • 1 tablespoon Fresh Parsley Chopped, for garnish.

Instructions
 

  • 1. Brown the sausage in a skillet over medium heat. Remove casing if using links and crumble the sausage. Cook until browned, about 5-7 minutes.
  • 2. Transfer the cooked sausage to the slow cooker. In the same skillet, add chopped onion and garlic. Sauté for 2-3 minutes until translucent.
  • 3. Add sautéed onions and garlic to the slow cooker along with sliced carrots, diced bell pepper, and diced potatoes.
  • 4. Pour in the can of diced tomatoes and rinsed cannellini beans.
  • 5. Pour the chicken broth over the mixture in the slow cooker.
  • 6. Sprinkle Italian seasoning, smoked paprika, salt, and pepper over the top. Stir gently to combine.
  • 7. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • 8. Check potatoes and carrots for tenderness before serving.
  • 9. Garnish with freshly chopped parsley before serving.
  • 10. Serve hot, optionally with crusty bread or a green salad.
