  • 2 pounds Boneless Skinless Chicken Breasts Ideal for slow cooking as they become tender and easy to shred.
  • 1 cup Pineapple Chunks Fresh or canned, packed in juice for a healthier option.
  • 1 cup BBQ Sauce Choose a sauce with a good balance of sweetness and tang.
  • 0.5 medium Red Onion Finely chopped, enhances flavor and texture.
  • 3-4 cloves Garlic Minced, adds depth of flavor.
  • 1 teaspoon Salt To season the chicken.
  • 0.5 teaspoon Black Pepper To season the chicken.

Optional Garnishes

  • 1 handful Fresh Cilantro Chopped, for garnish.
  • 1 handful Green Onions Sliced, for garnish.

Instructions
 

  • Gather all your ingredients and measure them out.
  • Prepare the slow cooker by spraying it with non-stick cooking spray.
  • Place the chicken breasts at the bottom of the slow cooker in a single layer.
  • In a mixing bowl, combine pineapple chunks, BBQ sauce, chopped red onion, minced garlic, salt, and pepper. Stir well.
  • Pour the mixture over the chicken breasts, ensuring they are completely covered.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours.
  • Check the chicken for tenderness during the last 30 minutes of cooking.
  • Shred the chicken in the slow cooker using two forks and mix it back into the sauce.
  • Taste and adjust seasoning if necessary.
  • Serve the shredded chicken and sauce on your favorite dishes, garnished with cilantro or green onions.

Notes

Leftovers can be stored in an airtight container for up to three days. Can be frozen for up to three months.
