Instructions
Prepare your ingredients: Cut the lamb into cubes, dice the onion, mince the garlic, slice the carrots, chop the celery, and dice the red bell pepper.
In a large skillet, heat the olive oil over medium-high heat. Brown the lamb cubes in batches for about 5-7 minutes.
Transfer the browned lamb to the slow cooker. Add the onion, garlic, carrots, celery, and bell pepper. Stir to combine.
Add the diced tomatoes, broth, thyme, oregano, paprika, salt, and pepper. Stir well.
Cover and cook on low for 6-8 hours or high for 3-4 hours.
About 30 minutes before serving, add the orzo pasta and stir gently.
Taste and adjust seasoning if needed. Serve hot, garnished with parsley.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat on the stovetop or microwave.
