Instructions
Wash the Russet potatoes thoroughly under cold running water and scrub the skins gently.
Pat the potatoes dry with a clean kitchen towel.
Use a fork to prick several holes in each potato to allow steam to escape.
In a bowl, combine the olive oil, sea salt, black pepper, garlic powder, and onion powder. Mix well.
Rub the seasoning mixture all over each potato.
Place the seasoned potatoes in the slow cooker in a single layer.
Cover the slow cooker and cook on low for 7-8 hours or on high for 4-5 hours.
Check for doneness by inserting a fork or knife into the center of a potato.
Carefully remove the potatoes from the slow cooker using tongs and allow to cool slightly before serving.
Slice each potato open lengthwise, fluff the insides with a fork, and add your choice of toppings.
