Instructions
 

  • Season the chicken thighs with salt and black pepper.
  • In the slow cooker, place the seasoned chicken thighs at the bottom. Add the diced onion, minced garlic, and sliced bell pepper on top.
  • Pour the crushed tomatoes and tomato paste over the layered ingredients. Then, add the chicken broth.
  • Sprinkle the dried oregano, dried basil, dried thyme, and crushed red pepper flakes over the mixture.
  • Cover the slow cooker and set it to cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
  • Check the chicken for doneness about 30 minutes before serving. It should be tender and cooked through.
  • Once cooked, taste the sauce and adjust seasoning if necessary. Serve over pasta or rice, and garnish with fresh parsley.
