Instructions
 

  • 1. Brown the ground beef in a large skillet over medium heat. Drain excess fat.
  • 2. Add chopped onion and minced garlic to the skillet. Sauté until onion is translucent.
  • 3. Stir in chili powder, cumin, and smoked paprika. Cook for an additional minute.
  • 4. Incorporate black beans and diced tomatoes. Stir well to combine.
  • 5. Grease the slow cooker and pour half a cup of enchilada sauce into the bottom.
  • 6. Assemble the enchiladas by placing a scoop of beef mixture in the center of each tortilla and rolling tightly.
  • 7. Place rolled tortillas seam-side down in the slow cooker. Repeat until filled.
  • 8. Pour remaining enchilada sauce over the top and sprinkle with cheeses.
  • 9. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • 10. Garnish with cilantro and serve with sour cream.
