Instructions
 

  • Gather all your ingredients to streamline the cooking process.
  • Pat the chicken breasts dry with paper towels for a good sear.
  • Season both sides of the chicken with salt, pepper, and Italian seasoning. Let sit for 10 minutes.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the chicken breasts to the skillet and sear for 5-7 minutes until golden brown.
  • Flip the chicken, reduce heat to medium, and cook for another 5-7 minutes until cooked through.
  • Transfer the chicken to a plate and cover with foil to keep warm.
  • Add minced garlic to the skillet and sauté for 30 seconds.
  • Add chopped bell peppers and cook for 3-4 minutes until softened.
  • Add fresh spinach and stir until wilted, about 2 minutes.
  • Return chicken to the skillet, drizzle with more olive oil, and sprinkle with Italian seasoning.
  • Cook together for another 2-3 minutes to meld flavors.
  • Sprinkle Parmesan cheese over the top just before serving.
  • Garnish with fresh herbs if desired and serve immediately.

Notes
