Gather all your ingredients to streamline the cooking process.
Pat the chicken breasts dry with paper towels for a good sear.
Season both sides of the chicken with salt, pepper, and Italian seasoning. Let sit for 10 minutes.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken breasts to the skillet and sear for 5-7 minutes until golden brown.
Flip the chicken, reduce heat to medium, and cook for another 5-7 minutes until cooked through.
Transfer the chicken to a plate and cover with foil to keep warm.
Add minced garlic to the skillet and sauté for 30 seconds.
Add chopped bell peppers and cook for 3-4 minutes until softened.
Add fresh spinach and stir until wilted, about 2 minutes.
Return chicken to the skillet, drizzle with more olive oil, and sprinkle with Italian seasoning.
Cook together for another 2-3 minutes to meld flavors.
Sprinkle Parmesan cheese over the top just before serving.
Garnish with fresh herbs if desired and serve immediately.
