Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Pound the chicken breasts to an even thickness of about half an inch.
  • In a skillet, heat olive oil and sauté minced garlic until fragrant.
  • Add spinach to the skillet and sauté until wilted, about 2-3 minutes.
  • In a mixing bowl, combine sautéed spinach and garlic with mozzarella, Parmesan, and Italian seasoning. Season with salt and pepper.
  • Stuff each chicken breast with about 1/4 of the stuffing mixture and secure with toothpicks.
  • In a skillet, sear the stuffed chicken breasts until golden brown on each side.
  • Pour marinara sauce over the chicken and sprinkle with additional mozzarella cheese.
  • Bake in the oven for 25-30 minutes until the chicken is cooked through.
  • Let the chicken rest for 5 minutes before serving.

Notes

For variations, consider adding ricotta cheese, sun-dried tomatoes, or different greens.
