  • Start by preparing your ingredients. Gather all necessary items including chicken thighs, butter, fresh lemons, garlic, chicken broth, salt, and pepper.
  • In a skillet over medium heat, melt the ½ cup of unsalted butter until bubbly and slightly golden.
  • Add the minced garlic to the melted butter, stirring constantly for about 1 to 2 minutes until fragrant.
  • Pour in the freshly squeezed lemon juice and chicken broth into the skillet. Stir to combine.
  • Season the chicken thighs with salt and pepper on both sides.
  • Place the seasoned chicken thighs in the slow cooker in a single layer.
  • Pour the lemon-garlic butter sauce over the chicken thighs, ensuring each piece is well coated.
  • Cover the slow cooker and set it on low heat for 6 to 8 hours or high heat for 3 to 4 hours.
  • Check the chicken thighs with a meat thermometer; they should reach an internal temperature of 165°F (75°C).
  • Remove the chicken from the slow cooker and let it rest for a few minutes.
  • Use the remaining sauce in the slow cooker as a drizzle over the chicken when serving.
  • Garnish the chicken thighs with fresh parsley or thyme before serving.

Notes

For a spicy kick, add red pepper flakes or sliced jalapeños to the sauce. You can also incorporate vegetables like carrots or potatoes into the slow cooker.
