Instructions
Start by preparing your ingredients. Gather all necessary items including chicken thighs, butter, fresh lemons, garlic, chicken broth, salt, and pepper.
In a skillet over medium heat, melt the ½ cup of unsalted butter until bubbly and slightly golden.
Add the minced garlic to the melted butter, stirring constantly for about 1 to 2 minutes until fragrant.
Pour in the freshly squeezed lemon juice and chicken broth into the skillet. Stir to combine.
Season the chicken thighs with salt and pepper on both sides.
Place the seasoned chicken thighs in the slow cooker in a single layer.
Pour the lemon-garlic butter sauce over the chicken thighs, ensuring each piece is well coated.
Cover the slow cooker and set it on low heat for 6 to 8 hours or high heat for 3 to 4 hours.
Check the chicken thighs with a meat thermometer; they should reach an internal temperature of 165°F (75°C).
Remove the chicken from the slow cooker and let it rest for a few minutes.
Use the remaining sauce in the slow cooker as a drizzle over the chicken when serving.
Garnish the chicken thighs with fresh parsley or thyme before serving.
Notes
For a spicy kick, add red pepper flakes or sliced jalapeños to the sauce. You can also incorporate vegetables like carrots or potatoes into the slow cooker.
