Instructions
 

  • Gather all the ingredients for the marinade.
  • Squeeze the juice of 2-3 lemons into a mixing bowl and zest one lemon.
  • Add olive oil to the lemon juice and zest to create a marinade.
  • Finely mince the garlic and add it to the marinade, stirring well.
  • Season the marinade with salt and pepper, adjusting to taste.
  • Place chicken breasts in a resealable bag or shallow dish and pour the marinade over them.
  • Seal the bag or cover the dish and refrigerate for at least 30 minutes.
  • Preheat grill or skillet over medium-high heat, adding olive oil if using a skillet.
  • Remove chicken from marinade and cook on one side for 6-7 minutes.
  • Flip the chicken and cook for another 6-7 minutes until cooked through.
  • Let the chicken rest for 5 minutes before slicing.
