Simple Instant Pot Beef Stroganoff

Ingredients
  

Beef

  • 1.5 pounds Beef Chuck Roast Cut into bite-sized cubes.

Vegetables

  • 1 medium Onion Finely chopped.
  • 3-4 cloves Garlic Minced.
  • 8 ounces Mushrooms Sliced.

Liquids

  • 2 cups Beef Broth Low-sodium preferred.
  • 1 cup Sour Cream For creamy texture.
  • 2 tablespoons Flour All-purpose, for thickening.

Seasonings

  • to taste Salt
  • to taste Black Pepper

Garnish

  • 2 tablespoons Fresh Parsley Chopped, for garnish.

Instructions
 

  • Set your Instant Pot to the sauté function. Heat oil and add chopped onion, cooking until translucent (3-4 minutes).
  • Add minced garlic and sliced mushrooms. Sauté for 4-5 minutes until softened.
  • Add beef cubes, season with salt and pepper, and brown on all sides (5-7 minutes).
  • Sprinkle flour over the mixture, stir well, and cook for an additional minute.
  • Pour in beef broth, scraping any browned bits from the bottom. Stir to combine.
  • Seal the Instant Pot lid, set to manual/pressure cook for 20 minutes on high pressure.
  • Allow for a natural pressure release for 10 minutes, then switch to venting to release remaining pressure.
  • Remove the lid and stir in sour cream until fully blended. Adjust seasoning if needed.
  • Garnish with chopped parsley and serve over egg noodles, rice, or mashed potatoes.

Notes

This dish can be customized with additional vegetables or different cuts of meat. Great for meal prep!
