Instructions
Preheat your oven to 375°F (190°C).
Grease your baking dish with butter or cooking spray.
Wash and peel the potatoes, then slice them thinly into even rounds, about 1/8 inch thick.
In a medium saucepan, melt the butter over medium heat. Add the sliced onion and sauté for about 5 minutes until translucent.
Sprinkle the flour over the onions and stir for 1-2 minutes to create a roux.
Gradually whisk in the milk, stirring constantly until the mixture thickens and bubbles gently, about 5-7 minutes.
Remove from heat and stir in the cheese, salt, and pepper until smooth.
In the prepared baking dish, layer one-third of the sliced potatoes, then pour one-third of the cheese sauce over them.
Repeat the layering process two more times, finishing with a layer of sauce on top.
Cover with aluminum foil and bake for 45 minutes.
Remove the foil and bake for an additional 15-20 minutes until golden brown and bubbly.
Allow to cool for 10 minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven for best results.
