Instructions
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the flour and salt.
Add the cold butter and work it into the flour until it resembles coarse crumbs.
Gradually add cold water, mixing gently until the dough comes together.
Shape the dough into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
Prepare the peach filling by tossing sliced peaches with sugar and letting them sit for 10-15 minutes.
Roll out the chilled dough to 1/8-inch thickness and cut out circles.
Transfer the dough circles to a greased muffin tin to form tartlet shells.
Spoon the peach filling into each shell and bake for 20-25 minutes until golden brown.
Cool the tartlets in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Serve warm or at room temperature, optionally with whipped cream or ice cream.
