Base Ingredients

  • 6 large Eggs Fresh large eggs provide structure and protein.
  • 1 cup Bell Peppers Diced mix of red, yellow, and green bell peppers.
  • 2 cups Spinach Fresh spinach, wilted down.
  • 0.5 cup Onions Chopped yellow or white onions.
  • 1 cup Cheese Grated cheese such as cheddar or feta.
  • 2 tablespoons Olive Oil Used for sautéing vegetables.

Seasoning

  • to taste Salt
  • to taste Black Pepper Freshly ground.
  • 1 tablespoon Herbs Chopped fresh herbs or 1 tsp dried herbs.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Sauté chopped onions until translucent, about 3-4 minutes.
  • Add diced bell peppers and sauté for another 3-4 minutes until softened.
  • Incorporate fresh spinach and stir until wilted, about 2-3 minutes.
  • In a mixing bowl, whisk together the eggs, adding salt and pepper to taste.
  • Spread the sautéed vegetables evenly in the skillet and pour the whisked eggs over them.
  • Sprinkle grated cheese on top.
  • Bake in the preheated oven for 20-25 minutes until set and golden.
  • Let cool for a few minutes before slicing and serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days.
