Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Sauté chopped onions until translucent, about 3-4 minutes.
Add diced bell peppers and sauté for another 3-4 minutes until softened.
Incorporate fresh spinach and stir until wilted, about 2-3 minutes.
In a mixing bowl, whisk together the eggs, adding salt and pepper to taste.
Spread the sautéed vegetables evenly in the skillet and pour the whisked eggs over them.
Sprinkle grated cheese on top.
Bake in the preheated oven for 20-25 minutes until set and golden.
Let cool for a few minutes before slicing and serving.
