Instructions
In a large mixing bowl, combine 2 cups of all-purpose flour, ½ teaspoon of salt, and 1 teaspoon of baking powder. Whisk the dry ingredients together until they are evenly mixed.
Make a well in the center of the dry ingredients and add 2 tablespoons of vegetable oil. Mix the oil into the flour mixture until it resembles coarse crumbs.
Gradually pour in ¾ cup of warm water while stirring with a fork. Continue adding water until the mixture starts to come together into a dough.
Once the dough forms, transfer it onto a floured surface. Knead the dough for about 5 to 7 minutes until it becomes smooth and elastic.
Cover the kneaded dough with a damp cloth or plastic wrap and let it rest for at least 15 minutes.
After resting, divide the dough into 8 equal portions. Roll each portion into a ball and flatten it slightly with your palm.
Using a rolling pin, roll each ball into a thin circle, about 8 inches in diameter.
Heat a skillet over medium-high heat. Once hot, place the rolled tortilla onto the skillet.
Cook the tortilla for about 30 seconds or until you see bubbles forming and the underside has light brown spots. Flip the tortilla and cook for an additional 30 seconds on the other side.
Remove the tortilla from the skillet and place it on a plate. Cover it with a clean kitchen towel to keep it warm while you cook the remaining tortillas.
Repeat the cooking process for all rolled tortillas, adjusting the heat as necessary to prevent burning. Serve immediately or store in an airtight container once cooled.
Notes
Store leftovers in an airtight container at room temperature for up to two days. For longer storage, refrigerate them.
