Instructions
Wash the whole chicken thoroughly and remove any giblets from the cavity.
In a large pot, heat a tablespoon of olive oil over medium heat.
Add the diced onion and sauté for about 3-5 minutes until translucent.
Incorporate the minced garlic and sauté for an additional minute.
Add the chopped carrots and celery, sauté for about 5-7 minutes.
Place the whole chicken into the pot and pour in the chicken broth.
Add the bay leaves and thyme, bring to a boil.
Reduce heat to low, cover, and simmer for 1.5 to 2 hours.
Remove the chicken, shred the meat, and return it to the pot.
Remove bay leaves, adjust seasoning with salt and pepper.
Simmer for an additional 10-15 minutes, then stir in chopped parsley before serving.
Serve hot, garnished with extra parsley if desired.
Notes
For a creamier texture, add a splash of heavy cream before serving. Customize with additional vegetables or herbs as desired.
