Instructions
1. Activate the yeast by combining warm water and active dry yeast in a small bowl. Let it sit for 5-10 minutes until frothy.
2. In a large mixing bowl, combine all-purpose flour and salt. Mix well.
3. Add the yeast mixture and olive oil to the flour mixture. Stir until the dough begins to come together.
4. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
5. Form the dough into a ball, place in an oiled bowl, cover, and let rise in a warm place for about 1 hour until doubled in size.
6. Prepare the filling by mixing shredded cheese, vegetables, cooked protein, and spices in a bowl.
7. Punch down the risen dough, divide into 4 portions, and roll each into a circle about ¼ inch thick.
8. Place filling on one half of each dough circle, leaving a border. Fold the other half over and seal the edges.
9. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
10. Brush calzones with olive oil and place on the baking sheet. Bake for 15-20 minutes until golden brown.
11. Allow to cool for a few minutes before serving warm with marinara sauce.
Notes
Leftover calzones can be stored in an airtight container for up to 3 days. Reheat in the oven for best texture.
