Egg Wash

Instructions
In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Whisk together.
Cut the cold butter into small cubes and add to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.
Gradually add cold water, one tablespoon at a time, mixing until the dough starts to come together. Form into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
In a medium bowl, combine diced apples, granulated sugar, cinnamon, and lemon juice. Toss until well-coated.
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Roll out the dough to about 1/8 inch thick and cut into 4-inch squares.
Place a tablespoon of apple filling in the center of each square. Fold the dough over to form a triangle and seal the edges.
Transfer to the baking sheet, brush with egg wash, and bake for 20-25 minutes until golden brown.
Allow to cool on a wire rack for a few minutes before serving.
