Instructions
In a mixing bowl, combine the chipotle peppers, minced garlic, lime juice, cumin, olive oil, salt, and pepper. Whisk until well blended.
Place the flank steak in a resealable plastic bag or shallow dish and pour the marinade over it. Ensure the steak is fully coated. Seal or cover and refrigerate for at least 1 hour, ideally 4 to 6 hours or overnight.
Preheat your grill to medium-high heat. Remove the flank steak from the marinade, allowing excess to drip off. Discard the used marinade.
Grill the steak for about 6 to 8 minutes on each side, until the internal temperature reaches 130 to 135 degrees Fahrenheit for medium-rare.
Remove the steak from the grill and let it rest for 10 minutes. Slice against the grain into thin strips and serve.
