Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add sliced onion and bell peppers, sauté for 5-7 minutes until softened.
Season chicken pieces with fajita seasoning, salt, and pepper. Ensure even coating.
Add seasoned chicken to the skillet with vegetables. Cook for 5-7 minutes until chicken is no longer pink.
Combine chicken and vegetables, mix well. If using, stir in cooked rice.
Transfer mixture to a greased 9x13 inch baking dish. Spread evenly.
Sprinkle shredded cheddar cheese on top.
Cover with aluminum foil and bake for 20 minutes.
Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
Let cool for a few minutes before serving. Garnish with fresh cilantro or avocado if desired.
Notes
For variations, consider adding jalapeños for heat, or using black beans for a vegetarian option.
