  • 1 pound Chicken Breast Boneless, skinless, cut into bite-sized pieces.
  • 1 each Red Bell Pepper Sliced into strips.
  • 1 each Yellow Bell Pepper Sliced into strips.
  • 1 each Green Bell Pepper Sliced into strips.
  • 1 medium Onion Sliced.
  • 2 tablespoons Fajita Seasoning Your favorite mix.
  • 1 cup Cheddar Cheese Shredded.
  • 2 tablespoons Olive Oil For sautéing.
  • to taste Salt
  • to taste Pepper
  • 1 cup Cooked Rice Optional, for added heartiness.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add sliced onion and bell peppers, sauté for 5-7 minutes until softened.
  • Season chicken pieces with fajita seasoning, salt, and pepper. Ensure even coating.
  • Add seasoned chicken to the skillet with vegetables. Cook for 5-7 minutes until chicken is no longer pink.
  • Combine chicken and vegetables, mix well. If using, stir in cooked rice.
  • Transfer mixture to a greased 9x13 inch baking dish. Spread evenly.
  • Sprinkle shredded cheddar cheese on top.
  • Cover with aluminum foil and bake for 20 minutes.
  • Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
  • Let cool for a few minutes before serving. Garnish with fresh cilantro or avocado if desired.

Notes

For variations, consider adding jalapeños for heat, or using black beans for a vegetarian option.
