  • 1 pound Boneless Skinless Chicken Breast Grilled until juicy and tender.
  • 8 ounces Fresh Mozzarella Choose mozzarella packed in water for best taste.
  • 2-3 medium Ripe Tomatoes Preferably heirloom or vine-ripened.
  • ¼ cup Fresh Basil Leaves Adds aromatic flavor.
  • 2 tablespoons Extra Virgin Olive Oil Enhances flavors and adds richness.
  • 1 tablespoon Balsamic Vinegar Adds a sweet and tangy note.
  • Salt and Pepper To taste.

Instructions
 

  • Season the chicken breast with salt and pepper on both sides.
  • Preheat the grill or grill pan over medium-high heat and grill the chicken for 6-7 minutes on each side until cooked through.
  • While the chicken is grilling, slice the fresh mozzarella and wash and cut the tomatoes.
  • Remove the chicken from the grill and let it rest for 5 minutes before slicing it into strips.
  • In a large mixing bowl, combine the sliced chicken, mozzarella, and tomatoes, and gently toss.
  • Add torn basil leaves and drizzle with olive oil and balsamic vinegar, then toss gently.
  • Transfer the salad to a serving platter and garnish with additional basil or pepper if desired.

Notes

This salad is best enjoyed fresh but can be stored in an airtight container for up to two days.
