Instructions
Begin by marinating the beef. In a medium bowl, combine the sliced beef sirloin, soy sauce, minced garlic, and a tablespoon of sesame oil. Mix well and let it marinate for at least 15 minutes.
While the beef is marinating, wash and prepare your vegetables. Slice the bell peppers into thin strips, julienne the carrots, and chop the broccoli into small florets.
Heat a large skillet or wok over high heat. Add the vegetable oil and allow it to heat until shimmering.
Once the oil is hot, add the marinated beef to the skillet. Spread it out in a single layer and let it sear for about 2-3 minutes without stirring.
After the beef has seared, stir-fry it for another 2-3 minutes until it is cooked through and no longer pink. Remove the beef from the skillet and transfer it to a plate.
Add the prepared vegetables to the skillet, starting with the carrots and broccoli. Stir-fry them for about 2 minutes.
After the carrots and broccoli have softened slightly, add the bell peppers to the skillet. Stir-fry for an additional 2 minutes.
Return the cooked beef to the skillet. Pour in the remaining tablespoon of sesame oil and toss everything together for about 1 minute.
Remove the skillet from the heat and garnish with chopped green onions. Serve immediately while hot.
Notes
For a spicy kick, add sliced jalapeños or red pepper flakes. You can also incorporate different vegetables based on what you have on hand.
