Thawed according to package instructions.
Instructions
Preheat your oven to 400°F (200°C).
In a large skillet, heat a tablespoon of oil over medium heat. Add the diced onion and sauté until translucent, about 3-5 minutes.
Add the minced garlic and continue to sauté for an additional minute.
Add the ground beef to the skillet. Cook until browned, about 6-8 minutes. Drain excess fat.
Stir in the chopped carrots and celery. Cook for another 5 minutes until the vegetables start to soften.
Sprinkle flour over the mixture, stirring well to coat.
Pour in beef broth and bring to a simmer. Stir continuously until thickened, about 2-3 minutes.
Add frozen mixed vegetables, thyme, salt, and pepper. Stir to combine and remove from heat.
Transfer the beef mixture into a baking dish, spreading it out evenly.
Unfold the thawed puff pastry sheet and place it over the filling. Seal the edges.
Make a few slits in the top of the pastry to allow steam to escape.
Bake for 25-30 minutes or until the pastry is puffed and golden brown.
Let cool for about 10 minutes before serving.

For variations, consider adding Worcestershire sauce, different vegetables, or using a biscuit topping instead of puff pastry.
