Instructions
Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
Add the chopped onion and sauté for 3-4 minutes until translucent and slightly golden.
Stir in the minced garlic and chopped bell peppers, sauté for an additional 2-3 minutes.
Add the ground beef, breaking it apart as it cooks. Stir occasionally for 5-7 minutes until browned.
Season with cumin, chili powder, paprika, salt, and pepper. Stir well and cook for another 2 minutes.
Add the cauliflower rice and stir to combine. Cook for an additional 5-7 minutes until tender.
Taste and adjust seasoning if necessary.
Remove from heat and let cool for a minute before serving.
Scoop portions into bowls and top with fresh cilantro and optional toppings.
Enjoy warm and customize further with your favorite toppings!

For variations, consider adding jalapeños for spice, or using lentils for a vegetarian option.
