Ingredients
  

Main Ingredients

  • 1 pound Ground Beef Lean ground beef for a lighter dish.
  • 4 cups Cauliflower Rice Can be made from fresh cauliflower or purchased pre-packaged.
  • 2 tablespoons Olive Oil For sautéing the beef and vegetables.
  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.
  • 1 cup Bell Peppers Chopped, preferably a mix of colors.

Spices

  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • ½ teaspoon Paprika

Seasoning

  • ½ teaspoon Salt To taste.
  • to taste Pepper To taste.

Garnish

  • 1 handful Fresh Cilantro For garnish.

Optional Toppings

  • to taste Avocado Optional topping.

  • to taste Shredded Cheese Optional topping.

Instructions
 

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  • Add the chopped onion and sauté for 3-4 minutes until translucent and slightly golden.
  • Stir in the minced garlic and chopped bell peppers, sauté for an additional 2-3 minutes.
  • Add the ground beef, breaking it apart as it cooks. Stir occasionally for 5-7 minutes until browned.
  • Season with cumin, chili powder, paprika, salt, and pepper. Stir well and cook for another 2 minutes.
  • Add the cauliflower rice and stir to combine. Cook for an additional 5-7 minutes until tender.
  • Taste and adjust seasoning if necessary.
  • Remove from heat and let cool for a minute before serving.
  • Scoop portions into bowls and top with fresh cilantro and optional toppings.
  • Enjoy warm and customize further with your favorite toppings!

Notes

For variations, consider adding jalapeños for spice, or using lentils for a vegetarian option.
