  • 4 medium Zucchini Approximately 2 pounds, sliced.
  • 1 large Onion Finely chopped.
  • 3 cloves Garlic Minced.
  • 4 cups Vegetable Broth Low-sodium.
  • 2 tablespoons Olive Oil Extra virgin.
  • Salt To taste.
  • Black Pepper Freshly ground, to taste.
  • handful Fresh Herbs Basil or parsley for garnish.

Instructions
 

  • Wash the zucchinis, trim the ends, and slice them into small pieces.
  • Heat olive oil in a large pot over medium heat until shimmering.
  • Add the chopped onion and sauté for 5-7 minutes until translucent.
  • Add minced garlic and sauté for another 1-2 minutes.
  • Add the chopped zucchini and stir well, cooking for another 5 minutes.
  • Pour in the vegetable broth and bring to a gentle boil.
  • Reduce heat and simmer uncovered for 15-20 minutes.
  • Blend the soup to your desired consistency using an immersion blender.
  • Adjust seasoning with salt and pepper as needed.
  • Serve warm, garnished with fresh herbs and a drizzle of olive oil.

Notes

For variations, consider adding spinach, potatoes, or spices like cumin or paprika.
