Instructions
Wash the zucchinis, trim the ends, and slice them into small pieces.
Heat olive oil in a large pot over medium heat until shimmering.
Add the chopped onion and sauté for 5-7 minutes until translucent.
Add minced garlic and sauté for another 1-2 minutes.
Add the chopped zucchini and stir well, cooking for another 5 minutes.
Pour in the vegetable broth and bring to a gentle boil.
Reduce heat and simmer uncovered for 15-20 minutes.
Blend the soup to your desired consistency using an immersion blender.
Adjust seasoning with salt and pepper as needed.
Serve warm, garnished with fresh herbs and a drizzle of olive oil.
