Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the corn.
Add the cornmeal to the bowl and mix well.
In a separate bowl, whisk together the milk and eggs until well combined.
Slowly pour the milk and egg mixture into the corn and cornmeal mixture, stirring gently.
Incorporate the melted butter into the mixture.
If using cheese, fold in the shredded cheddar cheese.
Season the mixture with salt and pepper to taste.
Pour the mixture into a greased baking dish and spread it evenly.
Bake for 45 to 50 minutes until the edges are firm and the center is set.
Allow to cool for about 10 minutes before serving.
