  • 2 cups Sweet Corn (canned or frozen) Canned corn should be drained and rinsed; frozen corn should be thawed.
  • 1 cup Cornmeal
  • 1 cup Milk Can use whole milk or any preferred type.
  • 2 large Eggs Helps bind the ingredients together.
  • 1/4 cup Melted Butter Adds richness and helps achieve a golden crust.
  • 1 cup Shredded Cheddar Cheese Optional, for added flavor.
  • 1 tbsp Sugar Optional, to enhance sweetness.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the corn.
  • Add the cornmeal to the bowl and mix well.
  • In a separate bowl, whisk together the milk and eggs until well combined.
  • Slowly pour the milk and egg mixture into the corn and cornmeal mixture, stirring gently.
  • Incorporate the melted butter into the mixture.
  • If using cheese, fold in the shredded cheddar cheese.
  • Season the mixture with salt and pepper to taste.
  • Pour the mixture into a greased baking dish and spread it evenly.
  • Bake for 45 to 50 minutes until the edges are firm and the center is set.
  • Allow to cool for about 10 minutes before serving.
  • Serve warm and enjoy!
