Instructions
Begin by preparing the chicken. If using raw chicken breast, boil for 15-20 minutes until fully cooked. Cool and shred or dice.
In a large mixing bowl, add the cooked chicken at room temperature or slightly chilled.
Add the mayonnaise and mix gently with a spatula until the chicken is evenly coated.
Chop the celery and add it to the bowl for texture and crunch.
Halve the red grapes and toss them into the mixture for sweetness.
Thinly slice the green onions and add them to the salad mixture.
Season with salt and pepper to taste, adjusting as necessary.
Squeeze the juice of half a lemon over the salad to brighten the flavors.
Gently toss all ingredients together, being careful not to overmix.
Cover and refrigerate for at least 30 minutes to allow flavors to meld.
Before serving, taste and adjust seasoning if necessary. Serve on greens, in a sandwich, or with crackers.
