  • 2 cups Cooked Chicken Breast Shredded or diced, ensure fully cooked and cool.
  • 1 cup Mayonnaise Choose high-quality mayonnaise for best flavor.
  • 2 stalks Celery Finely chopped for crunch.
  • 1 cup Red Grapes Halved for sweetness, optional.
  • 3 pieces Green Onions Thinly sliced, use both green and white parts.

  • 1/2 piece Lemon Juice Freshly squeezed for brightness.

Instructions
 

  • Begin by preparing the chicken. If using raw chicken breast, boil for 15-20 minutes until fully cooked. Cool and shred or dice.
  • In a large mixing bowl, add the cooked chicken at room temperature or slightly chilled.
  • Add the mayonnaise and mix gently with a spatula until the chicken is evenly coated.
  • Chop the celery and add it to the bowl for texture and crunch.
  • Halve the red grapes and toss them into the mixture for sweetness.
  • Thinly slice the green onions and add them to the salad mixture.
  • Season with salt and pepper to taste, adjusting as necessary.
  • Squeeze the juice of half a lemon over the salad to brighten the flavors.
  • Gently toss all ingredients together, being careful not to overmix.
  • Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  • Before serving, taste and adjust seasoning if necessary. Serve on greens, in a sandwich, or with crackers.
