  • 1 whole Whole Chicken (3-4 pounds) Choose organic or free-range for better flavor.
  • 2 teaspoon Salt Kosher salt recommended.
  • 1 teaspoon Black Pepper Freshly ground for best flavor.
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Paprika Sweet or smoked based on preference.
  • 2 tablespoon Fresh Herbs (Thyme or Rosemary) Chopped or whole as preferred.
  • 2 tablespoon Olive Oil Extra virgin recommended.
  • 1 cup Chicken Broth Low-sodium preferred.
  • 1 whole Lemon Juiced, with optional slices for cavity.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Prepare the chicken by removing giblets, rinsing, and patting dry.
  • Mix salt, black pepper, garlic powder, onion powder, paprika, and fresh herbs in a bowl.
  • Rub the spice mixture all over the chicken, including under the skin.
  • Drizzle olive oil over the chicken and coat well.
  • Place the chicken in a roasting pan and pour chicken broth into the bottom.
  • Squeeze lemon juice over the chicken and place lemon slices inside the cavity.
  • Roast the chicken for about 1.5 hours, or until the internal temperature reaches 165°F (75°C).
  • Baste the chicken with pan juices every 30 minutes.
  • Remove from oven and let rest for 10-15 minutes before carving.
  • Carve and serve warm with pan juices.

Notes

Consider adding seasonal vegetables to the roasting pan for a complete meal.
