Instructions
Preheat your oven to 375°F (190°C).
Prepare the chicken by removing giblets, rinsing, and patting dry.
Mix salt, black pepper, garlic powder, onion powder, paprika, and fresh herbs in a bowl.
Rub the spice mixture all over the chicken, including under the skin.
Drizzle olive oil over the chicken and coat well.
Place the chicken in a roasting pan and pour chicken broth into the bottom.
Squeeze lemon juice over the chicken and place lemon slices inside the cavity.
Roast the chicken for about 1.5 hours, or until the internal temperature reaches 165°F (75°C).
Baste the chicken with pan juices every 30 minutes.
Remove from oven and let rest for 10-15 minutes before carving.
Carve and serve warm with pan juices.
