  • 4 fillets Fresh Salmon Fillets Each fillet should weigh around 6 ounces.
  • 1 pound Fresh Asparagus Look for firm, straight spears with tightly closed tips.
  • 2 tablespoons Olive Oil Use extra virgin olive oil for best flavor.
  • 1 tablespoon Lemon Juice Freshly squeezed for brightness.
  • 2 cloves Garlic Minced for flavor.
  • to taste Salt Kosher salt recommended.
  • to taste Black Pepper Freshly ground for best flavor.
  • for garnish Fresh Herbs Dill or parsley recommended.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Rinse the asparagus under cold water and trim the tough ends. Pat dry with a paper towel.
  • Place the salmon fillets on a large sheet pan lined with parchment paper or aluminum foil.
  • Drizzle the salmon with 1 tablespoon of olive oil and season with salt and pepper.
  • In a mixing bowl, combine the asparagus with the remaining olive oil, minced garlic, salt, and pepper. Toss to coat.
  • Arrange the asparagus around the salmon on the sheet pan.
  • Squeeze fresh lemon juice over both the salmon and asparagus.
  • Roast in the preheated oven for 12-15 minutes until the salmon is opaque and flakes easily with a fork.
  • Remove from the oven and let rest for a couple of minutes before serving.
  • Garnish with fresh herbs and serve immediately.
