Instructions
 

  • 1. Prepare your ingredients: dice the bell peppers and onion, and mince the garlic.
  • 2. Turn on your Instant Pot and set it to the sauté function. Add the olive oil.
  • 3. Add the diced onion and sauté for 3-4 minutes until translucent.
  • 4. Add the minced garlic and sauté for an additional 30 seconds.
  • 5. Stir in the diced bell peppers and cook for another 3-4 minutes.
  • 6. Add the chicken breast, season with salt, pepper, cumin, and chili powder, and stir.
  • 7. Pour in the chicken broth, ensuring the chicken is submerged.
  • 8. Close the lid and cook on high pressure for 10 minutes.
  • 9. Allow the pressure to release naturally for 5 minutes, then perform a quick release.
  • 10. Remove the chicken, shred it, and return it to the pot.
  • 11. Stir in lime juice and adjust seasoning if necessary.
  • 12. Serve hot, garnished with fresh cilantro.

Notes

For variations, consider adding jalapeños for heat or sour cream for creaminess.
