Instructions
1. Prepare your ingredients: dice the bell peppers and onion, and mince the garlic.
2. Turn on your Instant Pot and set it to the sauté function. Add the olive oil.
3. Add the diced onion and sauté for 3-4 minutes until translucent.
4. Add the minced garlic and sauté for an additional 30 seconds.
5. Stir in the diced bell peppers and cook for another 3-4 minutes.
6. Add the chicken breast, season with salt, pepper, cumin, and chili powder, and stir.
7. Pour in the chicken broth, ensuring the chicken is submerged.
8. Close the lid and cook on high pressure for 10 minutes.
9. Allow the pressure to release naturally for 5 minutes, then perform a quick release.
10. Remove the chicken, shred it, and return it to the pot.
11. Stir in lime juice and adjust seasoning if necessary.
12. Serve hot, garnished with fresh cilantro.
