Instructions
Preheat your oven to 400°F (200°C).
Wash and peel the potatoes, then cut them into thin slices or wedges.
Toss the potato slices with olive oil, salt, and pepper in a large bowl.
Spread the potato slices in a single layer on a baking sheet lined with parchment paper and bake for 20-25 minutes.
While the potatoes bake, heat a skillet over medium heat and cook the ground beef until browned.
Add garlic powder, onion powder, chili powder, cumin, salt, and pepper to the beef and cook for an additional 2-3 minutes.
Lower the oven temperature to 350°F (175°C) and arrange the crispy potato slices on a platter.
Distribute the cooked ground beef over the potatoes, then sprinkle shredded cheddar cheese on top.
If using, add jalapeños over the cheese layer.
Bake for an additional 10-15 minutes until the cheese is melted and bubbling.
Garnish with chopped green onions and cilantro before serving.
Allow to cool slightly before serving hot.
