  • 1 pound Ground Beef Use lean ground beef for best results.
  • 2 large Russet Potatoes Slice into thin rounds or wedges.
  • 2 cups Shredded Cheddar Cheese Sharp cheddar melts beautifully.
  • 2 tablespoons Olive Oil For cooking the potatoes.

Spices

  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Chili Powder
  • 1 teaspoon Cumin

Seasonings

  • Salt To taste.
  • Pepper To taste.

Optional Toppings

  • 1-2 Jalapeños Sliced, for a spicy kick.
  • 2 tablespoons Chopped Green Onions For garnishing.
  • 1 handful Fresh Cilantro Chopped, for garnish.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Wash and peel the potatoes, then cut them into thin slices or wedges.
  • Toss the potato slices with olive oil, salt, and pepper in a large bowl.
  • Spread the potato slices in a single layer on a baking sheet lined with parchment paper and bake for 20-25 minutes.
  • While the potatoes bake, heat a skillet over medium heat and cook the ground beef until browned.
  • Add garlic powder, onion powder, chili powder, cumin, salt, and pepper to the beef and cook for an additional 2-3 minutes.
  • Lower the oven temperature to 350°F (175°C) and arrange the crispy potato slices on a platter.
  • Distribute the cooked ground beef over the potatoes, then sprinkle shredded cheddar cheese on top.
  • If using, add jalapeños over the cheese layer.
  • Bake for an additional 10-15 minutes until the cheese is melted and bubbling.
  • Garnish with chopped green onions and cilantro before serving.
  • Allow to cool slightly before serving hot.
