  • 2 pounds Boneless, Skinless Chicken Breasts Cut into bite-sized pieces.
  • 3 large Yellow Onions Sliced thinly.
  • 4 cloves Garlic Minced.
  • 2 cups Low-Sodium Chicken Broth
  • 1 cup Heavy Cream
  • 1 teaspoon Dried Thyme
  • 1 cup Shredded Gruyère Cheese For topping.
  • 2 tablespoons Olive Oil For cooking.
  • 1 cup Fresh Breadcrumbs For topping.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat. Add sliced onions and cook until caramelized, about 20-25 minutes.
  • Add minced garlic and cook for an additional minute.
  • Add chicken pieces, season with salt, pepper, and thyme. Cook until chicken begins to brown, about 5-7 minutes.
  • Pour in chicken broth and simmer for 5 minutes.
  • Remove from heat and stir in heavy cream.
  • Transfer mixture to a greased 9x13-inch baking dish. Sprinkle cheese on top.
  • Mix breadcrumbs with melted butter and sprinkle over cheese if desired.
  • Bake for 30-35 minutes until cheese is melted and bubbly.
  • Let sit for 10 minutes before serving.

Notes

This casserole can be stored in the refrigerator for up to three days and reheats well.
