Cut into bite-sized pieces.

Instructions
Preheat your oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat. Add sliced onions and cook until caramelized, about 20-25 minutes.
Add minced garlic and cook for an additional minute.
Add chicken pieces, season with salt, pepper, and thyme. Cook until chicken begins to brown, about 5-7 minutes.
Pour in chicken broth and simmer for 5 minutes.
Remove from heat and stir in heavy cream.
Transfer mixture to a greased 9x13-inch baking dish. Sprinkle cheese on top.
Mix breadcrumbs with melted butter and sprinkle over cheese if desired.
Bake for 30-35 minutes until cheese is melted and bubbly.
Let sit for 10 minutes before serving.
Notes
This casserole can be stored in the refrigerator for up to three days and reheats well.
