Gather all your ingredients: eggs, buffalo sauce, butter, green onions, salt, pepper, and cheddar cheese if using.
In a bowl, crack the eggs and whisk them until yolks and whites are fully blended.
Heat a non-stick frying pan over medium heat and add the butter to melt.
Pour the whisked eggs into the pan and cook undisturbed for 1-2 minutes until edges set.
Gently stir the eggs with a spatula, scraping edges and bringing cooked eggs to the center.
