Instructions
Preheat your oven to 400°F (200°C).
Trim excess fat from the beef tenderloin and season generously with salt and pepper.
Heat a large, oven-safe skillet over medium-high heat and add 2 tablespoons of butter. Sear the tenderloin for 3-4 minutes on each side.
Combine minced garlic and chopped herbs in a small bowl. Spread over the top of the beef.
Transfer the skillet to the oven and roast for 15-20 minutes until desired doneness.
Slice the baguettes in half lengthwise, leaving one side attached.
Let the beef rest for 10 minutes, then slice thinly against the grain.
Drizzle garlic butter sauce inside each baguette, layer with beef, cheese, and mustard if desired.
Return the filled baguettes to the oven for 5 minutes until cheese is melted.
Slice into portions and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven to restore crispiness.
