  • 1.5 pounds Beef Tenderloin Choose high-quality, preferably grass-fed beef.
  • 2 large Baguettes Each baguette should be around 12 inches long.
  • 4 cloves Garlic Minced.
  • 1 tablespoon Fresh Rosemary Finely chopped.
  • 1 tablespoon Fresh Thyme Finely chopped.
  • 1 tablespoon Fresh Parsley Finely chopped.
  • 3 tablespoons Unsalted Butter For basting and sautéing.
  • to taste Salt Use high-quality sea salt.
  • to taste Black Pepper Freshly ground.
  • 1 cup Cheese (optional) Thinly sliced provolone or mozzarella.
  • 2 tablespoons Dijon Mustard (optional) For spreading on the baguettes.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Trim excess fat from the beef tenderloin and season generously with salt and pepper.
  • Heat a large, oven-safe skillet over medium-high heat and add 2 tablespoons of butter. Sear the tenderloin for 3-4 minutes on each side.
  • Combine minced garlic and chopped herbs in a small bowl. Spread over the top of the beef.
  • Transfer the skillet to the oven and roast for 15-20 minutes until desired doneness.
  • Slice the baguettes in half lengthwise, leaving one side attached.
  • Let the beef rest for 10 minutes, then slice thinly against the grain.
  • Drizzle garlic butter sauce inside each baguette, layer with beef, cheese, and mustard if desired.
  • Return the filled baguettes to the oven for 5 minutes until cheese is melted.
  • Slice into portions and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven to restore crispiness.
