Instructions
1. In a mixing bowl, combine 1/4 cup of olive oil, the juice of 1-2 lemons, 2-3 minced garlic cloves, 1 teaspoon of ground cumin, 1 teaspoon of paprika, and 1 teaspoon of black pepper. Whisk until fully combined.
2. Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes.
3. Wash and slice the zucchinis into half-moons and set aside.
4. Preheat a large skillet over medium-high heat. Add 1-2 tablespoons of olive oil to the skillet.
5. Remove the chicken from the marinade and place in the hot skillet. Cook for approximately 6-7 minutes on one side without moving.
6. Flip the chicken and cook for an additional 6-7 minutes or until the internal temperature reaches 165°F (75°C).
7. Transfer the chicken to a plate and cover with aluminum foil to keep warm.
8. In the same skillet, add the sliced zucchini and a pinch of salt. Sauté for 4-5 minutes until tender and bright green.
