Instructions
Preheat your oven to 400°F (200°C).
Rinse the salmon fillets under cold water and pat them dry with a paper towel.
In a mixing bowl, combine the apricot preserves and Dijon mustard. Stir until well blended.
Place the salmon fillets skin-side down on a lined baking sheet and spread the apricot Dijon mixture over the top of each fillet.
Prepare the broccoli by cutting it into bite-sized florets and tossing with olive oil, minced garlic, salt, and pepper.
Arrange the seasoned broccoli around the salmon fillets on the baking sheet.
Bake for about 15-20 minutes until the salmon is opaque and flakes easily with a fork.
Halfway through cooking, gently stir the broccoli for even roasting.
Remove from the oven and let the dish rest for a few minutes before serving.
Serve hot, garnished with fresh herbs if desired.
