  • 4 fillets Salmon Fillets Each weighing approximately 6 ounces.
  • 1/3 cup Apricot Preserves Choose a high-quality brand without added preservatives.
  • 2 tablespoons Dijon Mustard Adds tangy sharpness to the glaze.
  • 2 cups Fresh Broccoli Florets Packed with vitamins and minerals.
  • 2 tablespoons Olive Oil Extra virgin olive oil for drizzling over broccoli.
  • 2 cloves Garlic Minced for added flavor.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Rinse the salmon fillets under cold water and pat them dry with a paper towel.
  • In a mixing bowl, combine the apricot preserves and Dijon mustard. Stir until well blended.
  • Place the salmon fillets skin-side down on a lined baking sheet and spread the apricot Dijon mixture over the top of each fillet.
  • Prepare the broccoli by cutting it into bite-sized florets and tossing with olive oil, minced garlic, salt, and pepper.
  • Arrange the seasoned broccoli around the salmon fillets on the baking sheet.
  • Bake for about 15-20 minutes until the salmon is opaque and flakes easily with a fork.
  • Halfway through cooking, gently stir the broccoli for even roasting.
  • Remove from the oven and let the dish rest for a few minutes before serving.
  • Serve hot, garnished with fresh herbs if desired.

Store leftovers in an airtight container in the refrigerator for up to three days.
