Return beef to the pot, add tomatoes, and stir for 2-3 minutes.
Pour in beef broth, add chili powder, salt, and pepper. Bring to a gentle boil.
Reduce heat to low, cover, and simmer for 1.5 to 2 hours until beef is tender.
Stir in peanut butter until fully incorporated, thickening the stew.
Add carrots and potatoes, cover, and simmer for an additional 30-40 minutes.
Adjust seasoning as needed, then serve garnished with fresh cilantro.
