Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Prepare an 8-inch square baking dish by greasing it lightly with butter or lining it with parchment paper.
  • In a large mixing bowl, combine 1 cup of all-purpose flour, 1 teaspoon of baking powder, and ¼ teaspoon of salt. Whisk until well blended.
  • In a separate bowl, melt ½ cup of unsalted butter. Allow it to cool slightly before adding it to the dry ingredients. Then, pour in the beaten eggs and 1 teaspoon of vanilla extract. Stir until it forms a soft batter.
  • Spread about two-thirds of the batter evenly in the prepared baking dish.
  • In another bowl, combine the chopped rhubarb with 1 cup of granulated sugar and 2 tablespoons of all-purpose flour. Toss until well coated.
  • Evenly distribute the rhubarb mixture over the batter in the baking dish.
  • Dollop the remaining batter over the rhubarb filling.
  • Bake for approximately 35-40 minutes until golden brown and a toothpick comes out clean.
  • Allow to cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely.
  • Slice into squares and serve.
