Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Grease a muffin tin lightly with butter or cooking spray.
  • In a mixing bowl, combine the diced peaches, sugar, and cinnamon.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • In another bowl, mix melted butter, eggs, and milk until well combined.
  • Pour wet ingredients into dry ingredients and stir until just combined.
  • Gently fold in the peach filling.
  • Fill each muffin cup about two-thirds full with the batter.
  • Optionally, add a dollop of jam on top of each cruffin.
  • Bake for 20-25 minutes until golden brown.
  • Allow to cool in the pan for 5 minutes before transferring to a wire rack.
  • Serve warm or at room temperature.
