Instructions
Preheat your oven to 375°F (190°C).
Grease a muffin tin lightly with butter or cooking spray.
In a mixing bowl, combine the diced peaches, sugar, and cinnamon.
In a separate bowl, whisk together flour, baking powder, and salt.
In another bowl, mix melted butter, eggs, and milk until well combined.
Pour wet ingredients into dry ingredients and stir until just combined.
Gently fold in the peach filling.
Fill each muffin cup about two-thirds full with the batter.
Optionally, add a dollop of jam on top of each cruffin.
Bake for 20-25 minutes until golden brown.
Allow to cool in the pan for 5 minutes before transferring to a wire rack.
Serve warm or at room temperature.
