Instructions
Heat olive oil in a large pot over medium heat. Sauté chopped onion for 3-4 minutes until translucent.
Add minced garlic and sauté for another minute.
Add chicken thighs and brown on each side for about 5 minutes.
Pour in BBQ sauce and honey, coating the chicken thoroughly.
Add rice and stir to coat each grain in the sauce.
Add chicken broth, season with salt and pepper, and bring to a gentle boil.
Reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender.
Stir in mixed vegetables during the last 5 minutes of cooking.
Let sit for 5 minutes after cooking, then fluff rice and serve.
