  • 2 pounds Boneless, Skinless Chicken Thighs Juicy and flavorful, perfect for absorbing the sauce.
  • 1 cup Long-Grain Rice Rinse before cooking for fluffy texture.
  • 1/4 cup Honey Adds sweetness and thickens the sauce.
  • 1/2 cup BBQ Sauce Choose your favorite flavor.
  • 1 medium Onion Finely chopped for depth of flavor.
  • 2 cloves Garlic Minced for aromatic flavor.
  • 2 cups Chicken Broth Use low-sodium for better control of saltiness.
  • 1 cup Mixed Vegetables Such as bell peppers or peas for added nutrition.

  • 2 tablespoons Olive Oil For sautéing the onions and garlic.

Instructions
 

  • Heat olive oil in a large pot over medium heat. Sauté chopped onion for 3-4 minutes until translucent.
  • Add minced garlic and sauté for another minute.
  • Add chicken thighs and brown on each side for about 5 minutes.
  • Pour in BBQ sauce and honey, coating the chicken thoroughly.
  • Add rice and stir to coat each grain in the sauce.
  • Add chicken broth, season with salt and pepper, and bring to a gentle boil.
  • Reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender.
  • Stir in mixed vegetables during the last 5 minutes of cooking.
  • Let sit for 5 minutes after cooking, then fluff rice and serve.

Notes

This dish is great for meal prep and can be stored in the refrigerator for up to three days.
