Instructions
Prepare your workspace by gathering all the ingredients and tools you’ll need.
In the saucepan, combine granulated sugar, brown sugar, and heavy cream. Stir over medium heat until sugars dissolve completely.
Increase heat to medium-high and bring to a boil without stirring for about 5-7 minutes until golden caramel hue.
Add unsalted butter and a pinch of salt. Stir until butter is melted. If using, add cinnamon now.
Continue to boil while stirring gently. Use a candy thermometer to monitor temperature aiming for 235°F (113°C).
Once at desired temperature, remove from heat and cool for about 5 minutes.
Fold in toasted pecan halves until evenly coated.
Prepare a baking sheet lined with parchment paper and drop spoonfuls of the mixture onto it.
Let pralines sit undisturbed at room temperature for about 30 minutes to firm up.
Once cooled, gently lift pralines off the parchment paper and enjoy or store.
Notes
Store pralines in an airtight container at room temperature for up to two weeks.
