Instructions
 

  • Prepare your workspace by gathering all the ingredients and tools you’ll need.
  • In the saucepan, combine granulated sugar, brown sugar, and heavy cream. Stir over medium heat until sugars dissolve completely.
  • Increase heat to medium-high and bring to a boil without stirring for about 5-7 minutes until golden caramel hue.
  • Add unsalted butter and a pinch of salt. Stir until butter is melted. If using, add cinnamon now.
  • Continue to boil while stirring gently. Use a candy thermometer to monitor temperature aiming for 235°F (113°C).
  • Once at desired temperature, remove from heat and cool for about 5 minutes.
  • Fold in toasted pecan halves until evenly coated.
  • Prepare a baking sheet lined with parchment paper and drop spoonfuls of the mixture onto it.
  • Let pralines sit undisturbed at room temperature for about 30 minutes to firm up.
  • Once cooled, gently lift pralines off the parchment paper and enjoy or store.

Notes

Store pralines in an airtight container at room temperature for up to two weeks.
