Bologna
Approximately 8 ounces, fried until golden brown.

Bread
Classic white or whole wheat.

Unsalted Butter
For frying and toasting the bread.

Mustard
Optional, for added flavor.

American or cheddar, optional.
Instructions
Gather all your ingredients and tools: skillet, spatula, and cutting board.
Heat your skillet over medium heat for about 2 minutes.
Cut a small slit in the center of each bologna slice to prevent curling.
Add 1 tablespoon of butter to the hot skillet and let it melt.
Place the bologna slices in the skillet and fry for 2-3 minutes until golden brown.
Flip the bologna slices and fry the other side for another 2-3 minutes.
If using cheese, place it on top of the bologna during the last minute of cooking.
Spread butter on one side of each bread slice.
Remove the bologna and toast the buttered side of the bread in the skillet for 1-2 minutes.
Assemble the sandwich with fried bologna on one slice and mustard on the other.
Press the sandwich together and return it to the skillet for another minute to warm through.
Remove from skillet, let cool slightly, cut in half if desired, and serve warm.
Notes
For variations, consider adding jalapeños, fresh vegetables, or using different types of bread and cheese.
