Avocado Salsa

Instructions
 

  • In a medium bowl, combine lime juice, olive oil, garlic, cumin, salt, and pepper. Whisk until blended.
  • Place chicken in a resealable bag or dish, pour marinade over, seal, and refrigerate for at least 30 minutes.
  • Prepare avocado salsa by dicing avocados and mixing with cilantro, tomato, red onion, jalapeño, and lime juice in a bowl.
  • Heat grill or skillet over medium-high heat. Cook chicken for 5-7 minutes on each side until golden brown and cooked through.
  • Let chicken rest for 5 minutes, then slice into strips or cubes.
  • Serve chicken topped with avocado salsa and additional lime juice if desired.

Notes

For variations, consider adding smoked paprika, lime zest, or diced mango to the salsa.
