Instructions
Preheat your oven to 375°F (190°C).
Bring a large pot of salted water to a boil and cook the cheese tortellini according to package instructions (3-5 minutes).
Heat olive oil in a large skillet over medium heat. Sauté chopped onion for 3-4 minutes until translucent.
Add diced bell peppers to the skillet and sauté for another 3-4 minutes until tender.
Drain the cooked tortellini and add it to the skillet with the vegetables. Stir gently to combine.
Pour pizza sauce over the mixture and sprinkle in Italian seasoning, salt, and pepper. Stir until evenly coated.
Transfer the mixture to a greased 9x13-inch casserole dish and spread evenly.
Sprinkle shredded mozzarella cheese on top.
Cover with aluminum foil and bake for 20 minutes.
Remove the foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
Let cool for 5 minutes before serving. Garnish with fresh basil or parsley if desired.
