  • 1.5 cups Pizza Sauce Store-bought or homemade.
  • 2 cups Shredded Mozzarella Cheese For a gooey topping.
  • 1 cup Diced Bell Peppers Any color, adds crunch and sweetness.
  • 0.5 cup Chopped Onion Sautéed for sweetness.
  • 1 teaspoon Italian Seasoning Enhances flavor with herbs.
  • 2 tablespoons Olive Oil For sautéing vegetables.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Bring a large pot of salted water to a boil and cook the cheese tortellini according to package instructions (3-5 minutes).
  • Heat olive oil in a large skillet over medium heat. Sauté chopped onion for 3-4 minutes until translucent.
  • Add diced bell peppers to the skillet and sauté for another 3-4 minutes until tender.
  • Drain the cooked tortellini and add it to the skillet with the vegetables. Stir gently to combine.
  • Pour pizza sauce over the mixture and sprinkle in Italian seasoning, salt, and pepper. Stir until evenly coated.
  • Transfer the mixture to a greased 9x13-inch casserole dish and spread evenly.
  • Sprinkle shredded mozzarella cheese on top.
  • Cover with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
  • Let cool for 5 minutes before serving. Garnish with fresh basil or parsley if desired.
