Instructions
Marinate the beef in a bowl with 1 tablespoon of soy sauce and a dash of sesame oil for 15 minutes.
Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of cooking oil and heat until shimmering.
Add the marinated beef to the pan in a single layer. Sear for 2-3 minutes on each side until browned. Remove and set aside.
Add another tablespoon of oil if necessary, then add minced garlic and stir-fry for 30 seconds until fragrant.
Add the diced vegetables and sauté for 3-5 minutes until tender but still crisp.
Push the vegetables to one side and pour in the beaten eggs. Scramble gently and mix with the vegetables once cooked.
Add the cooked rice, breaking up clumps, and stir well. Pour in the remaining soy sauce and stir-fry for 3-5 minutes.
Return the cooked beef to the skillet, add chopped green onions, and stir thoroughly for another minute.
Adjust seasoning with salt and pepper as desired, then remove from heat and serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat with a splash of water to restore moisture.
