Instructions
Gather all your ingredients on a clean countertop.
In a medium mixing bowl, combine the shredded cooked chicken with the BBQ sauce. Mix well until the chicken is evenly coated.
Heat a large skillet over medium heat and add one tablespoon of olive oil.
Lay one tortilla flat and spoon half of the BBQ chicken mixture onto one half of the tortilla.
Sprinkle shredded cheese over the chicken and add green onions if desired.
Fold the tortilla in half to encase the filling and press down gently.
Transfer the folded quesadilla to the skillet and cook for 3-4 minutes until golden brown.
Flip the quesadilla and cook the other side for another 3-4 minutes.
Remove the quesadilla from the skillet and let it cool for a minute before slicing into wedges.
Repeat the process with the remaining tortillas and filling.
Serve warm with sour cream, fresh cilantro, and additional BBQ sauce on the side.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in a skillet for best results.
