  • 3 medium Ripe Bananas Mashed, about 1 cup total.
  • 1 cup Granulated Sugar
  • 2 large Eggs
  • 1 cup All-Purpose Flour
  • 1/3 cup Cocoa Powder Unsweetened.
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/2 cup Vegetable Oil
  • 1/2 cup Chocolate Chips Optional, semi-sweet or dark.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Mash the ripe bananas in a large mixing bowl until smooth.
  • Add granulated sugar to the mashed bananas and mix well.
  • Crack in the eggs and mix until fully blended.
  • Pour in the vegetable oil and mix until smooth.
  • In a separate bowl, sift together flour, cocoa powder, baking soda, and salt.
  • Gradually add the dry mixture to the wet ingredients and fold gently until just combined.
  • If using, fold in the chocolate chips.
  • Pour the batter into a greased or lined 8x8 inch baking pan.
  • Bake for 25-30 minutes, until a toothpick comes out with a few moist crumbs.
  • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting.

Notes

Store leftovers in an airtight container for up to three days, or refrigerate for up to a week.
